Jacob’s career in meat processing began at a very young age. His first exposure to the meat industry began when he apprenticed with local ag teacher Mark Clement on mobile livestock slaughters. Even before enrolling in high school he knew that agriculture was in his future. He graduated as a well decorated member of the FFA with over four years of experience in both livestock harvesting and evaluation. His custom slaughter work continued when he was asked to begin working at a mid-sized butcher shop in his hometown of Paso Robles. He ran one of the only USDA inspected mobile slaughter units in the state. After a few years of managing the harvest unit, Jacob was promoted to manage the full processing operation. He ran slaughter, cutting, grinding, and smoking, and assisted in managing a busy retail department as well. Transitioning to J and G Lau Meat Processing Center has been an exciting step for Jacob, as he can now apply his skills and knowledge to educate a new generation of students gaining experience in the meats industry.
